Raw White Chocolate & Passionfruit Cheesecake:
Ingredients:
Base:
1 2/3 cups oats
4 tbsps softened coconut oil
4 tbsps coconut milk
4 dates, soaked in warm water/ pitted
1 1/2 tbsps lucuma
1/2 tsp cinnamon
1/2 tsp vanilla beans
Place all ingredients in food processor. Beat for about 5 min, until fine and sticky. Flatten inside small cheesecake tin. Refrigerate.
White chocolate:
2 full cups cashews soaked (overnight or for a min of 4 hrs)
8 tbsps coconut milk
1/4 cup softened coconut oil
50 ml melted cacao butter
2 tbsps maple syrup
1 tsp vanilla extract
Place all ingredients in blender. Whizz until smooth and creamy, you might have to stop to move things around every now and then. Pour over crust. Freeze for 3 hrs or overnight.
Top with passionfruit and garnish with mint leaves. Keep refrigerated.
Note: for a grain-free version sub the oats for 1 cup white almonds and 2/3 cup desiccated coconut.
