Breakfast style whole wheat homemade chips
Ingredients:
For dough:
5 cups whole wheat flour
3 tablespoons olive oil
1,5 cups warm water
1/2 cup warm milk (optional)
1 dessertspoon salt
1 dessertspoon sugar
1 packet instant dry yeast
For topping (just suggestions):
Extra virgin olive oil (optional)
Greek yogurt
Cucumber slices, cherry tomatoes, sausages, fresh green pepper slices, radish slices, organic green olives, fresh lettuce, dill & basil, strawberries, strawberry jam, pan fried quail eggs, shallot slices with sumach, red pepper flakes, four seasons pepper corns...
Directions:
Put the flour in a large bowl. Add the dry yeast on top and combine with your fingers.
Add the warm water, warm milk (optional), olive oil, salt and sugar. Combine them lightly.
Knead the dough by your hands softly and slowly. The dough should be soft. If you want you can knead it on a floured surface.
Then, put the smooth dough in another large and clean (not floured) bowl and cover it with a damp cloth. Leave it in a warm place for about 2 hours. By this way, it will rise about double in size and the fermentation is realized.
After 2 hours, transfer it to an oven tray that is sprinkled with flour (or you can use a baking paper). Roll it and make a thin dough. The crispiness of final product is related to the thickness of dough.
Take a sharp knife dipped in flour, cut the dough into little squares like chips and seperate them.
Bake it in a preheated oven at 200° C for about 25-30 minutes.
When it comes to room temprature, you can spread extra virgin olive oil on them (optional). Top with greek yogurt and whatever you want.
You can serve with different dip sauces like greek yogurt + extra virgin olive oil + dried mint + red pepper flakes.
