  • 1 cup uncooked white rice
  • 4 cups water
  • 2 cups milk of choice (dairy or non-dairy)
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Pinch of salt
  • Ice, for serving

Method

  • Step 1

Soak the cereal and rice: In a large bowl, combine the cereal, uncooked rice, and 4 cups of hot water. Cover and soak for at least 4 hours, or overnight with room temperature water.

  • Step 2

Pour the entire mixture into a blender and blend on high for 2–3 minutes, or until completely smooth and creamy.

  • Step 3

Strain the mixture through a fine-mesh strainer or cheesecloth into a large pitcher to remove solids. Discard or compost the pulp.

  • Step 4

Mix the horchata: Stir in milk, maple syrup, vanilla extract, cinnamon, nutmeg, and a pinch of salt. Mix well until fully combined.

  • Step 5

Serve: Pour over ice and garnish with a sprinkle of cinnamon or a few extra cereal pieces. Enjoy chilled.

  • Step 6

Store: Keep refrigerated for up to 1 week. Shake or stir before serving.
