"Happy Father's Day treat for all those lovely Dads out there! Bite size sausage rolls, I mixed the sausage meat with caramelized onion and garlic, paprika, ground chipotle and ground chili ancho with a bit of Mexican oregano, wrap this mixture around puff pastry and made a big roll that then I cut in bite size chunks, place them on your tray gently brushed with a bit of egg and milk mixture, add some black sesame seeds and let them cook until the get that lovely golden color crust, I add before serving a drizzle of honey and they are ready to enjoy. I made this for my handsome husband who is also a very good Dad and we love him very much, this year I'm not with my Papa sadly and I have been thinking of him all day, feliz dia Pa tqm! The flavors of these sausage rolls alone are going to have your eaters craving more! @holasus has created delicious, bite sized pieces of sausage heaven perfectly wrapped in puff pastry! Where do I sign up?

INGREDIENTS
1 sheet of puff pastry

6 organic large pork sausages 

1 white onion finely diced

3 fat garlic cloves

2 tsp spanish paprika

2 tsp ground chipotle

2 tsp ground ancho chili

2 tsp mexican oregano

1 free range egg

1/4 cup of milk

1/4 cup of sesame seeds or black sesame seeds

1/2 cup of organic clear honey




DIRECTIONS
In a hot pan add some olive oil and add your onion I fried my onion a little bit and then add my garlic, stir continuously on a medium flame until the onion becomes brown and tender, this happens after a while of stirring and cooking it on a low heat.



Cut the end of your sausages and get the meat out of the casing by pushing it out with your knife, place it on a medium bowl. Add your spices and dried herbs as well as your caramelized onion and garlic, combine all the ingredients well with your hands and reserve your meat on the side while you get your pastry ready.

Preheat your oven 350F (180C

).

Prepare a surface with a bit of flour and extend your puff pastry in a rectangle to 1/2 a cm thickness, place your sausage filling in the middle of your pastry rectangle and lengthwise, shape the meat into a sausage like form until is all distributed equally.



Wash your hands and fold your pastry over the meat forming your sausage roll, with a bit of egg-milk wash brushed on the edges of your pastry to help stick the ends, cut any extra pastry off, once you have your meat covered with the pastry you can cut with a sharp knife bite size sausage rolls, clean your knife in between cuts for a more neat result.



Place your little sausage rolls over a prepared baking tray with baking paper at the bottom, brush over your pastry with a bit more of egg wash add some sesame seeds on top and bake until the lovely crust becomes golden and your meat is cooked, serve warm and drizzle a bit of honey on top for that perfect last touch!
