  • 4 bone in, skin on chicken thighs
  • 4 bone-in, skin-on chicken drumsticks
  • 2 cups buttermilk
  • 2 cups flour
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1/2 cup maple syrup
  • 4 slices chopped bacon
  • 1 tablespoon butter
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon red pepper flakes

Method

  • Step 1

    Marinate the Chicken: In a large bowl or resealable bag, soak the chicken pieces in buttermilk. Add a pinch of salt and ground black pepper. Marinate in the refrigerator for at least 4 hours, preferably overnight.

  • Step 2

    Prepare the Bacon: Cook the bacon slices in a small saucepan until crispy. Remove the bacon, let it cool, and then crumble it into small pieces. Set aside. Leave any remaining bacon fat in the saucepan.

  • Step 3

    Make the Maple Bacon Glaze: In the same saucepan, melt the butter over medium heat. Add the maple syrup, Dijon mustard, apple cider vinegar, and red pepper flakes. Let the mixture simmer for about 10 minutes until it thickens slightly. Stir in the crumbled bacon. Set the glaze aside.

    Bread the Chicken: In a shallow bowl, combine the all-purpose flour, paprika, garlic powder, and onion powder. Remove the chicken from the buttermilk, allowing any excess to drip off. Dredge each chicken breast in the flour mixture, pressing the flour onto the chicken to adhere.

    Fry the Chicken: Heat about 2 inches of vegetable oil in a deep skillet or Dutch oven to 350°F (medium heat). Carefully place the breaded chicken breasts into the hot oil, making sure not to overcrowd the pan. Fry for 6-8 minutes per side, until the chicken is golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C). Transfer the fried chicken to a paper towel-lined plate to drain any excess oil.

    Glaze the Chicken: While the fried chicken is still hot, drizzle the maple bacon glaze over each piece, allowing it to soak in.
