ingredients
- 1 1/2 pounds chicken thighs
- 2 ripe mangoes
- 4 rehydrated and chopped roughly dried chipotle peppers
- 3 cloves minced garlic
- 2 small quartered yellow onions
- 1 juiced lime
- 2 tablespoons honey
- 2 tablespoons extra virgin olive oil
- 1 cup chicken broth
- 1 tablespoon freshly chopped cilantro
- 1 cup crumbled queso fresco cheese
Method
Step 1
Preheat your oven to 400°F. Season chicken thighs with salt and pepper on both sides.
Step 2
In a large oven-safe skillet, heat extra virgin olive oil over medium-high heat. Add chicken thighs and sear for 5-6 minutes, flipping halfway.
Step 3
In a blender or food processor, combine mango, chopped chipotle peppers, garlic, honey, lime juice, chicken broth, and cilantro. Blend until smooth.
Step 4
Add quartered onions to the skillet with the seared chicken. Pour the mango chipotle sauce over the chicken thighs and onions in the skillet. Transfer the skillet to the preheated oven and bake for 25-30 minutes.
Step 5
Once the chicken is cooked, remove the skillet from the oven. Garnish with crumbled queso fresco cheese and freshly chopped cilantro.
