- 2 pounds cut into 1-inch cubes Yukon Gold potatoes
- 3 tablespoons extra virgin olive oil
- 2 cloves of minced garlic
- 1 tablespoon freshly chopped rosemary
- 1 tablespoon freshly chopped thyme
- 1 cup grated Parmesan cheese
- to taste salt and ground black pepper
Method
Step 1
Preheat the Oven: Preheat your oven to 425°F.
Step 2
Prepare the Potatoes: Wash and dice the potatoes into 1-inch cubes. You can leave the skin on for added texture and flavor.
Step 3
Season the Potatoes: In a large mixing bowl, combine the diced potatoes with extra virgin olive oil, minced garlic, freshly chopped rosemary, freshly chopped thyme leaves, salt, and ground black pepper. Toss the potatoes until they are evenly coated with the fresh herbs and seasoning mixture.
Step 4
Spread on a Baking Sheet: Line a baking sheet with parchment paper or lightly grease it with cooking spray. Spread the seasoned potatoes out in a single layer on the baking sheet.
Step 5
Roast in the Oven: Place the baking sheet in the preheated oven and roast the potatoes for approximately 25 minutes, until they are golden brown and crispy on the outside. Be sure to stir or flip the potatoes halfway through the cooking time for even browning.
Step 6
Add Parmesan Cheese and Broil: Turn the oven’s heat up to its highest setting, broil. Remove the roasted potatoes from the oven and immediately sprinkle the grated Parmesan cheese evenly over them. Transfer to the oven, and broil for 3-5 minutes, until the cheese is bubbly and slightly browned.
Step 7
