ingredients
- 2 pounds trimmed of excess fat boneless ribeye steaks
- 1 small minced onion
- 2 large eggs
- 1 tablespoon salt
- 1 tablespoon garlic powder
- 1 tablespoon paprika
- 1 tablespoon ground black pepper
- 4 hamburger buns
- 4 slices of cheddar cheese
- 1 cup sliced bread and butter pickles
For the Burger Sauce
ingredients
- 1/2 cup mayonnaise
- 2 tablespoons whole grain mustard
- 2 cloves of minced garlic
- 1 small finely chopped shallot
- 1 tablespoon Worcestershire sauce
- 1 tablespoon honey
- to taste salt and ground black pepper
Method
Step 1
Grind the Ribeye Steaks: Cut the boneless ribeye steaks into small cubes. Using a meat grinder or food processor, grind the ribeye steak cubes into ground beef. Be sure not to over grind it. You want it to be course.
Step 2
Prepare the Burger Sauce: In a small bowl, whisk together the mayonnaise, whole grain mustard, minced garlic, finely chopped shallot, Worcestershire sauce, and honey until well combined. Season the sauce with salt and ground black pepper to taste. Refrigerate until ready to use.
Step 3
Make the Ribeye Steak Burger Patties: In a large mixing bowl, combine the ground ribeye steak, minced onion, egg, salt, ground black pepper, paprika, and garlic powder. Gently mix the ingredients until well combined, being careful not to overwork the meat. Divide the mixture into 4 equal portions and shape them into burger patties.
Step 4
Grill the Ribeye Steak Burgers: Preheat your grill to high heat (about 500°F). Place the burger patties on the hot grill grates and cook for about 3-4 minutes per side for medium-rare, or adjust the cooking time to your desired level of doneness. During the last minute of grilling, add a slice of cheddar cheese to each patty and close the grill lid to melt the cheese.
Step 5
Toast the Burger Buns: While the burgers are cooking, split the hamburger buns and lightly toast them on the grill until they are golden brown and lightly charred.
Step 6
Assemble the Ribeye Steak Burgers: Generously spread the homemade burger sauce on the top half of each toasted bun. Place a cooked ribeye burger patty with melted cheddar cheese on top. Add a few bread and butter pickles on top of the burger patties.
Step 7
Serve: Place the top half of the bun on the burger, and serve immediately!
