Coconut Banana Pancakes

  • 1 banana, mashed
  • 1 egg
  • 3 tablespoons coconut flour
  • 1/ 2 teaspoon baking powder
  • 1/ 2 teaspoon cinnamon
  • Maple butter, optional


  • Step 1

    Whisk the banana and egg together. Add coconut flour, baking powder and cinnamon. Mix well.

  • Step 2

    Heat coconut oil in a skillet over low heat. Divide the batter into 4-5 mini pancakes. Cook covered for 3-4 minutes per side.

  • Step 3

    Drizzle with maple butter if desired.
