  • 2/3 cup coconut sugar
  • 1 tablespoon organic honey
  • 1 large pasture-raised egg
  • 1 teaspoon organic vanilla extract
  • 1 cup plus 2 tablespoons almond flour
  • 1/2 cup plus 3 tablespoons cassava flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 1/2 cup Cascadian Farm Organic Cherries, thawed, chopped, and patted dry
  • 1/2 cup vegan organic dark chocolate, chopped
  • Flaky sea salt, for topping

Method

  • Step 1

    Preheat the oven to 350°F and line a baking sheet with parchment paper.

  • Step 2

    In a large bowl, beat together the softened butter, coconut sugar, and honey until light and fluffy.

  • Step 3

    Mix in the egg and vanilla extract until smooth and fully incorporated.

  • Step 4

    In a separate bowl, whisk together almond flour, cassava flour, baking soda, and salt.

  • Step 5

    Gradually add the dry mixture into the wet ingredients. Stir just until combined—do not overmix.

  • Step 6

    Gently stir in chopped Cascadian Farm Organic Cherries and chopped dark chocolate.

  • Step 7

    Use a cookie scoop to portion the dough onto the prepared baking sheet. Slightly flatten each cookie—they won’t spread much on their own.
