INGREDIENTS
1 Tbsp coconut oil
1/3 cup honey
1.5 Tbsp natural crunchy peanut butter
90g gluten free rolled oats
60g shredded coconut
50g natural dried fruit of choice (we used sultanas and cranberries)
1 Tbsp chia seeds
20g cacao nibs
Finely grated zest of 1 mandarin
Pinch of salt
DIRECTIONS
Melt together coconut oil, honey, and peanut butter using the double boiler method. Remove from the heat and add remaining ingredients. Stir well.
Pour into a baking tin lined with baking paper. Place in refrigerator for at least 2 hours to set.
