Recipe Card

For the Base

ingredients

  • 1/2 cup raw almonds or mixed nuts
  • 2 tablespoon shredded coconut
  • 1 tablespoon cacao powder
  • 1/4 cup chopped dried dates, soaked in water and drained

For the Filling

ingredients

  • 1 cup raw cashews, soaked overnight or 5 hours
  • 1/4 cup coconut oil
  • 1/3 cup natural sweetener (maple syrup, coconut sugar or rice malt)
  • 1/4 cup unsweetened almond milk
  • 1 tablespoon lemon juice
  • 1-2 tsp peppermint extract, to taste
  • 1 teaspoon pure vanilla extract
  • 2 teaspoon matcha powder, or more to taste
  • 1/4 teaspoon salt

Other

ingredients

  • 2 ounces dark chocolate, chopped and melted in the microwave

Make the Base

Method

  • Step 1

    To make the base, prepare a 6-count silicon muffin tray. Set aside. Add almonds to food processor and blend for a few seconds. Add the remaining ingredients and blend until crumbly. Press into the silicon muffin tray with your fingers, and put in the freezer while you make the filling.

  • Step 2

    To make the filling, blend all ingredients until smooth in a Vitamix blender, scraping down the sides of the blender as needed. Spoon the filling over the base and place in the freezer to chill.

  • Step 3

    Drizzle the melted dark chocolate over the filling.

  • Step 4

    Store in the freezer. Eat straight from the freezer, thawing for a few mins if required.
