Skillet Green And Red Apple Cake

"Told ya! Once my skillet cake turned out good I would make it again and again. This Friday I'm experimenting with some green and red apples with loads of toasted pecans! I made a very simple vanilla cake batter and tucked in these little feathers of apples, sprinkled a good amount of toasted pecans and shoved in the oven!"

RECIPE:

Ingredients: 
1/2 cup unsalted butter
  1/2 cup brown sugar and a little more (this can be adjusted according to your taste buds) 
1 cup all-purpose flour
  A little vanilla extract 
1/2 tsp baking powder 
1 tsp lemon zest 
2 eggs
1/4 cup butter milk
  1 green apple, thinly sliced
1 red apple, thinly sliced 
1/2 cup toasted pecans, coarsely crushed

Preparation method: 
1. Beat the butter and sugar for about 2-3 mins. I mixed it by hand… I didn't use any stand mixer or hand beater. 
2. Add the eggs and vanilla extract, mix well, until combined. 
3. Add the baking powder and the all-purpose flour in the mixture and beat well. Add the lemon zest and mix well. 
4. Grease the skillet with some butter (I used a 9 inch diameter skillet). 
5. Pour this batter in the buttered skillet and spread it. You may also line the skillet with parchment paper and add your batter. Both work pretty well. 
6. Now tuck the thinly sliced green and red apples in the batter, one by one, to create the shape of a flower. Sprinkle the toasted and coarsely crushed pecans and some brown sugar on top of the apples. 
7. Preheat the oven on 170 C and bake the cake for about 30-40 minutes. 
8. The bake will come out like a flower.
