ingredients

  • 2 1/2 cups pasta, cooked according to package directions
  • 1/2 cup olive oil, divided
  • 1 lemon, juiced
  • 1 1/2 tablespoons dry oregano
  • 1 teaspoon dry basil
  • 1/2 teaspoon chili flakes
  • 1/2 teaspoon ground black pepper
  • Salt, To Taste
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chopped chopped bell pepper
  • 1/2 cup cooked sweet corn kernels
  • 1/2 cup cooked green peas
  • 1/2 cup chopped parsley
  • 1/4 cup pitted black olives
  • 1/4 cup chopped almonds
  • 1 1/2 tablespoons chopped jalapeno

Method

  • Step 1

    Stir the pasta with 2 tablespoons olive oil.

  • Step 2

    In a bowl, mix the remaining olive oil, lemon juice, dry herbs, salt, and pepper. Mix well and set aside.

  • Step 3

    Once the pasta reaches room temperature, add all the chopped vegetables, olives, almonds and dressing to it. Toss well.

  • Step 4

    Allow the salad to soak in all the flavors for 20-30 minutes before serving. You can also keep it in the fridge and serve cold.
