Rich Chocolate Layer Cake With Vanilla Cream

For the Cake:
50 grams of butter, at room temperature
100 grams of sugar (approx. 3/4 cup)

2 eggs
1 teaspoon of baking powder
1 teaspoon of vanilla extract
160 grams of ground almonds (approx. 1+3 / 4 cup).

White chocolate chips, ½ cup or 50 grams of finely chopped white chocolate
1 tablespoon of cocoa powder
Zest of 1 orange (optional)

For the Chocolate Ganach:
200 grams of dark chocolate, chopped
250 ml. (1 cup) heavy cream

For the Vanilla Cream:
250 ml. (1 cup) heavy cream
1/2 cup of milk
3 tsp. cream stabilizer or instant vanilla pudding mix

10 Amarena cherries, chopped, or dried cherries


Directions:

Grease a 25 by 25 cm squere baking tin.


1. Preheat oven to 160 degrees Celcius / 320 degrees Fahrenheit.
2. Place sugar and butter in a mixer bowl and mix for 2 minutes.
3. Add eggs, one at a time into a smooth, uniform batter.
4. Add vanilla extract, cocoa, orange zest, ground almonds, baking powder and chocolate chips. Stir.
5. Transfer the mixture to a baking pan lined with baking paper. Spread evenly.
6. Bake for approx. 25 minutes, or a toothpick comes out clean (cake height will be 2-3 cm).
Cover the cake with tin foil until Cool. Cut the cake into 3 strips of uniform size.
7. Chocolate ganach: Place the chocolate into a medium bowl. Heat the cream in a small sauce pan over medium heat. Bring just to a boil. When the cream has come to a boil, pour over the chopped chocolate, and whisk until smooth.
8. Vanilla Cream: in a mixer bowl put heavy cream, milk, and stabilizer, and whip on high speed until very stable cream is formed.
9. Place the first strip of cake on a serving plate. Spread 2 tablespoons of chocolate sauce, spread one-third of the cream, sprinkle half the amount of cherries over the cream, place another strip of cake and repeat the process.
10. After placing the last strip, pour all the remaining chocolate sauce over it.
