ingredients

  • 1 tablespoon flavorless oil
  • 1 cup chopped mixed veggies (carrots, zucchini, etc)
  • 1 chicken sausage, sliced into circles
  • 1 cup marinara sauce
  • 2 large eggs
  • Salt and pepper, to taste
  • Micro greens, as garnish (optional)

Method

  • Step 1

    Heat oil in a pan over medium heat. Add in the vegetables and sausage. Saute for 8-10 minutes until the vegetables have softened.

  • Step 2

    Mix in the marinara sauce. Bring to a simmer and cook for 2 minutes.

  • Step 3

    Reduce the heat and crack in the eggs. Cover the pan and cook for 2-3 minutes or until the egg whites are fully cooked.

  • Step 4

    Sprinkle with salt and pepper. Garnish with micro-greens.
