Tomato Soup With Watercress And Prosciutto Grilled Cheese

RECIPE
Ingredients:
Cherry tomatoes, garlic, olive oil, oregano, onion, vegetable broth, smoked paprika, red wine vinegar, 2 slices of bread, cheddar, prosciutto.
INSTRUCTIONS
Heat some olive oil in a big pan on medium high heat.
Add the tomatoes, chopped onion and garlic.
Add salt and pepper, oregano and paprika.
Stir together and cook about 3-4 minutes until the tomatoes are tender.
Add the red wine vinegar, cook 2 minutes.
Add the broth, reduce heat and let simmer 15 minutes.
Transfer in a blender and blend the soup until chunks disappear.
Heat oil in a pan on medium high heat.
Assemble grilled cheese with cheddar and prosciutto.
Cook the sandwich on both sides about 2-3 minutes per side until cheese melts.
