"Recipe:
For 2 Sandwiches
Ingredients:
2 Sesame Seed Sandwich Buns
4 slices of bacon, cooked (to cook mess free bacon, place it on a foil lined rimmed baking sheet. Preheat oven to 400˚ F. Place bacon in oven and cook for about 15 minutes or until nice and crispy)
2 slices Swiss cheese
1 avocado, sliced
1 cup cremini mushrooms, sliced
1 tablespoon butter
Olive Oil, as needed
2 fresh eggs
2 teaspoons white vinegar
handful of fresh dill
salt and pepper to taste
Instructions:
Heat butter and about 1-teaspoon olive oil in a sauté pan until butter has melted. Add mushrooms and season with salt and pepper. Cook until mushrooms release water and start to brown, about 5-7 minutes. Keep warm while you prepare the eggs.
Fill a wide, shallow pot, with about 1 ½ inches of water. Bring to a simmer and add salt and vinegar. Crack eggs into two separate ramekins.
Vigorously stir water, creating a mini whirlpool. Slowly add in each egg. Turn off heat, and cover pan. Let the eggs sit for about 5 minutes. Remove with a spider strainer.
Assemble sandwiches by layering mushrooms, avocado, cheese, bacon, and finally the egg. Sprinkle the whole thing with dill and enjoy!
