Chinese Watermelon Rind Stir Fry

ingredients
- 2 cup julienned Watermelon rind
- 1 cups julienned Carrots
- 1 inch minced Ginger
- 1 clove of minced Garlic
- 1/2 cup fresh Chives
- 1 tbsp Honey
- 3 tablespoons Soy sauce
- 2 tablespoons Fish sauce
- 2 tablespoons Sesame oil
- 1 tbsp chopped Basil leaves
- 2 tablespoons fresh Mint leaves
- 1/4 teaspoon dried Chili flakes
Method
Step 1
Cut 2-3 large chunks of watermelon. Scoop the pink flesh of the watermelon out and save for dessert or another day! Using a sharp knife, cut the green rind off roughly. Don't use a peeler as it's too fine.
Step 2
Julienne your white watermelon rind and 2 large carrots.
Step 3
Heat 2 tbsp of sesame oil in a wok on high. Dice 1 white onion and fry in the wok for 5 minutes, stirring occasionally.
Step 4
Add the carrots and watermelon rind to the wok and fry another 5 minutes, stirring 2-3 times.
Step 5
Chop 1/3 cup chives into 2 inch strips. Mince 2 cloves of garlic and 1 inch of fresh ginger. Add these to your wok and give a good stir. Cook 5 minutes longer.
Step 6
In a bowl, mix 3 tbsp soy sauce, 2 tbsp fish sauce, 1/4 tsp chili flakes and 1 tbsp honey. Finely chop 1 Tbsp basil leaves and 1 Tbsp mint leaves & mix together.
Step 7
Pour the sauce into the wok and stir. Garnish with 1 Tbsp mint leaves and additional chili flakes if you like.
Step 8
Serve with your favorite noodles or rice. These portions serve four as a side or two as a main.
