Avocado And Ahi Tuna Eggs Benedict

Ingredients
1/4 pound ahi tuna
1 1/2 tsp sesame oil
1 inch of ginger, grated
1 small orange, zested
1/4 tsp salt and pepper
1/2 lemon
1 tablespoon finely chopped chives
1 avocado
1 poached egg
Black and white sesame seeds
Method
Dice ahi tuna steak into cubes and add to a bowl. Add sesame oil, grated ginger, zested orange, and salt and pepper. Mix to combine. Let sit in the fridge for 1530 minutes. Take out tuna from the fridge and add chives and lemon juice and mix. In another small bowl, mash avocado and sprinkle with lemon juice to prevent browning. Using a biscuit cutter as a mold, press down avocado with a spoon, then layer by spooning the tuna on top. Place poached egg on top avocado half and garnish with black and white sesame seeds. Break the yolk and enjoy!
