1 heads of romaine, rinsed, dried and chopped
1 can chickpeas, drained and rinshes
1/2 pint cherry tomatoes, halved
1 red pepper, chopped
1 orange pepper, chopped
1/4 cup chopped pepperoncini (optional)
1/4 cup pitted kalamata olives, chopped
1/2 cup crumbled feta cheese
2 stalks celery, chopped
1/2 cucumber, chopped
red wine vinegar, to taste
olive oil, to taste
1 tbsp fresh dill, chopped
In a large bowl, layer all the ingredients, then toss with red wine vinegar, olive oil, salt and pepper to taste. Garnish with fresh dill, toss gently, and serve.
