2 slices bread
1/2 large sweet potato
4 strips double smoked applewood bacon
2 slices of cheese
2 tbsp butter
Fry thinly sliced sweet potatoes in frying pan with a small amount of olive oil until crispy and golden. At the same time, fry bacon in medium skillet until cooked and crispy. Set both aside.
Next take your bread and butter one side of each slice. Place butter side down on skillet over medium heat. Top each slice of bread with cheese of your choice (I used Swiss). Cook until underside is golden brown and cheese has melted. I used a cover to help the cheese melt quicker. While the cheese is melting, fry your egg over easy in a small skillet.
Once cheese is melty and bread is golden, top one slice with sweet potatoes, then bacon, then avocado, then egg. Cover with the remaining slice of cheesy toasted bread and enjoy.
