For Amaranth Porridge
ingredients
- 1 cup amaranth
- 1 1/2 cups milk of choice (I love oat)
- 1 1/2 cups water
- 1/2 teaspoon cinnamon
- pinch Kosher salt
For the Caramelized Bananas
ingredients
- 2 tablespoon coconut oil
- 2 just ripe bananas, cut into 1/2-inch pieces
- 2 tablespoons coconut sugar
- pinch Kosher salt

- shredded coconut
- sesame seeds
- walnuts
- peanut butter
For the Amar
Method
Step 1
Pour amaranth into pot followed by milk and water. Whisk in cinnamon and salt. Bring to a boil and then simmer for 25-30 minutes. The amaranth will only thicken at the end.
Step 2
While amaranth is simmering, melt coconut oil in a small pot. Add banana slices and sprinkle with coconut sugar and pinch of salt. Cook for about 2 minutes and then flip and cook for about 2 minutes more. You want them soft, but not falling apart.
Step 3
Scoop amaranth into bowls and top with caramelized bananas and other desired toppings! Enjoy!
