"Hi guys! I don’t know about you but whenever I am travelling somewhere I love to make my own snacks for the road. And there is no better, easy-to-make, healthy and filling pick-me-up snack than energy balls. This time I made matcha bliss balls. Despite my initial dislike, I am now a big fan of this super powder and I am always looking for new ways to add it to my desserts. These balls came out great. They are chewy, tender and a perfect combination of sweet and bitter. Mix of matcha, coconut and dates gives you a natural energy hit that might be just what you need when you are on the road or during your afternoon snack."

ingredients

  • 2 ounces coconut or almond flour (if using almond you might have to add a bit more)
  • 1 tablespoon matcha powder
  • 3 tablespoons melted coconut paste (or coconut oil)
  • 4 pitted and soaked medjool dates
  • 2 tablespoons vegan vanilla protein powder - optional
  • 1/4 cup shredded coconut
  • 1/4 cup coconut milk
  • 4 tablespoons shredded coconut or raw cocoa powder for coating

Method

  • Step 1

    Add all the ingredients to a food processor and blend until they are well combined and come together like a cookie dough. Check the consistency and if needed add more flour (if it is too wet) or more coconut milk (if it is too thick).

  • Step 2

    Form small balls by rolling a bit of mixture in your hands and coat each with shredded coconut or cocoa powder. Place them in a freezer for 20-30 minutes. Enjoy!
