Grilled zucchini sandwich

ingredients

  • 4 slices of good quality bread (like sourdough)
  • 3 tablespoons hummus (or mashed cooked chicpeas with roasted garlic and lemon juice)
  • 1 small red pepper
  • 1/2 medium zucchini
  • 1 handful of arugula
  • 1/2 handful of fresh basil leaves
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1/2 teaspoon balsamic vinegar or olive oil
  • 1/2 package smoked tofu, optional

Method

  • Step 1

    Slice zucchini lengthwise into around Β½ cm slices. Remove seeds from the pepper and cut it into flat sections. Brush a little olive oil or balsamic vinegar on them and sprinkle with pepper. Grill the vegetables until slightly charred.

  • Step 2

    If you are not using hummus but mashed chickpeas, grill a whole clove of garlic too. Mash chickpeas using a fork or food processor, add some lemon juice, fresh pepper and slightly cooled, squeezed roasted garlic.

  • Step 3

    If you want to, toast your bread. Spread hummus or your chickpeas on a slice of bread and cut it in half. Stack your vegetables and if you want to, smoked tofu on one side and cover with the other.
