"I don’t think that there is anything better that you could have for lunch than a delicious, fresh, packed with nutrients sandwich. Do you guys agree? As a kid I used to eat sandwiches every day and although it is no longer a case I still consider them my favourite go-to lunch option that keeps me fueled for the day. This chickpea salad sandwich has been my latest obsession. It is insanely tasty, nutritious and hearty and you only need a few ingredients to prepare it. It couldn’t be more simple, and it is so satisfying and perfect, whether for an easy lunch or to pack on a picnic."

ingredients

  • 150 gram cooked chickpeas
  • 2 tablespoons capers
  • 1 red onion, finely chopped
  • 1/2 fresh lemon - juice of
  • 2 tablespoons dijon mustard
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons capers brine
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1 teaspoon runny tahini

Method

  • Step 1

    Using a food processor pulse chickpeas a few times to break them into small pieces. Don’t over do it, you should still have some chickpea chunks left. Alternatively you can use a fork to do it. Transfer chickpeas to a bowl. Add finely chopped red onion and capers and mix.

  • Step 2

    In a separate bowl combine tahini, lemon juice, mustard, capers brine and apple cider vinegar, mix until combined. Pour the sauce over the chickpeas. Mix everything and season with salt, pepper and garlic. Taste and if needed add more spices or capers/onion until you achieve your desired taste. Serve on your favorite bread with some extra veggies.
