Chickpea Salad Sandwich
(8)
"I don’t think that there is anything better that you could have for lunch than a delicious, fresh, packed with nutrients sandwich. Do you guys agree? As a kid I used to eat sandwiches every day and although it is no longer a case I still consider them my favourite go-to lunch option that keeps me fueled for the day. This chickpea salad sandwich has been my latest obsession. It is insanely tasty, nutritious and hearty and you only need a few ingredients to prepare it. It couldn’t be more simple, and it is so satisfying and perfect, whether for an easy lunch or to pack on a picnic."

Mix everything and season with salt, pepper and garlic. Taste and if needed add more spices or capers/onion until you achieve your desired taste. Serve on your favorite bread with some extra veggies.
