A blend of shredded mozzarella and akkawi cheese (a soft cow's milk cheese named after the city of Akka, similar to mozzarella) with za'atar olive oil brushed over a thin-crust pizza, showcases the popularity of Lebanese food in the area of my own heritage.
The Detroit metropolitan area is home to one of the largest Lebanese populations in the US. Here there is a strong presence of traditional Arabic food, but also a creative expression of Arab-American fusion, which is what the recipe celebrates!

ingredients
Pizza dough
- 4 cups all-purpose flour
- 2 tablespoons olive oil
- 2 1/4 teaspoons instant yeast
- 2 teaspoons kosher salt
- 1 teaspoon sugar
- 1 1/2 cup warm water

- 1 Roma tomato, sliced
- 1/4 cup za'atar
- 3 tablespoons Lemon Olive Oil
- 3/4 cup shredded mozzarella cheese
- 1/2 cup shredded akkawi cheese
- Freshly torn basil, for serving
Method
To make the dough:
Step 1
Combine the flour, olive oil, yeast, salt, sugar, and warm water in a bowl of a stand mixer. Mix on low with the dough hook for 2 minutes. Then mix on medium for 5 more minutes.
Step 2
Remove the dough and lightly grease the bowl, place the dough back into the bowl and let proof until doubled, about 30 minutes.
Step 3
Remove the dough and divide it into two pieces and reshape into round balls. Store one in the fridge or freezer for another time, and let one sit at room temperature uncovered for 20 minutes.
To assemble and bake:
Step 1
Preheat the Ooni oven to 450°F.
Step 2
Toss the sliced tomato with 1 tablespoon of olive oil and place into the Ooni oven for 3-5 minutes until softened and slightly charred. Remove from the oven and set aside.
Step 3
Roll out the dough ball to 12-14 inches.
Step 4
Mix the zaatar with lemon olive oil in a small bowl until it forms a spreadable mixture. Spread it all over the pizza dough and top with the roasted tomato slices. Sprinkle the mozzarella cheese and akkawi cheese evenly over top.
Step 5
Place into the Ooni for 10 minutes, remove from oven, and sprinkle with fresh basil leaves. Serve immediately.
