Avocado Toast with Basil Pesto and Mushrooms

ingredients
- 2 slices bread of choice, toasted
- 1 avocado
- Juice of 1/2 a lemon
- 1/4 cup basil pesto (homemade or store-bought)
- 1 cup sliced Cremini mushrooms
- 1 garlic clove, minced
- 1/2 tablespoon chopped thyme
- 1 teaspoon lemon zest
- Pinch of pink Himalayan sea salt
- Pinch of ground black pepper
- 2 tablespoon chopped parsley
Method
Step 1
Mash avocado with fresh lemon juice. Set aside.
Step 2
Heat oil in a pan over medium heat. Add Cremini mushrooms to the pan with fresh garlic, thyme, lemon zest, Himalayan pink salt and black pepper. Saute for 5-8 minutes. Turn off heat.
Step 3
Spread the avocado onto the toasted bread slices. Top with pesto, sautéed mushrooms, and parsley.
