ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 clove garlic, grated
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon flaky salt, plus more to taste
  • 4 radishes, thinly sliced
  • 1/2 cucumber, cut into ½-inch pieces
  • 1/2 large tomato, cut into thin wedges
  • 1/2 shallot, thinly sliced
  • 1/2 cup cottage cheese
  • 1 soft-boiled egg
  • 1/4 cup castelvetrano olives, sliced in half
  • 1 tablespoon capers
  • 1 teaspoon fresh dill

Method

  • Step 1

    In a medium-sized bowl, whisk together the dressing ingredients: the olive oil, vinegar, garlic, red pepper and flaky sea salt.

  • Step 2

    Toss in the radishes, cucumber, tomato, and shallot. Stir to combine.

  • Step 3

    In a large bowl or plate, add your cottage cheese topped by the soft-boiled egg, salad, olives, capers, dill, and any additional sea salt you like. Drizzle with some of the dressing and enjoy!
