ingredients
- 2 tablespoons extra virgin olive oil
- 1 tablespoon apple cider vinegar
- 1 clove garlic, grated
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon flaky salt, plus more to taste
- 4 radishes, thinly sliced
- 1/2 cucumber, cut into ½-inch pieces
- 1/2 large tomato, cut into thin wedges
- 1/2 shallot, thinly sliced
- 1/2 cup cottage cheese
- 1 soft-boiled egg
- 1/4 cup castelvetrano olives, sliced in half
- 1 tablespoon capers
- 1 teaspoon fresh dill
Method
Step 1
In a medium-sized bowl, whisk together the dressing ingredients: the olive oil, vinegar, garlic, red pepper and flaky sea salt.
Step 2
Toss in the radishes, cucumber, tomato, and shallot. Stir to combine.
Step 3
In a large bowl or plate, add your cottage cheese topped by the soft-boiled egg, salad, olives, capers, dill, and any additional sea salt you like. Drizzle with some of the dressing and enjoy!
