  • 3/4 cup Yumello Foods Salted Date Almond Butter (or plain almond butter)
  • 1 cup oat flour
  • 1 scoop vanilla protein powder
  • 1/4 cup ground almonds
  • 1/3 cup maple syrup
  • Pinch of salt

Chocolate Coating:

  • 100 grams dark chocolate
  • 1 teaspoon coconut oil
  • Cacao nibs, to taste

Method

  • Step 1

    In a mixing bowl, combine Yumello Foods Salted Date Almond Butter, oat flour, vanilla protein powder, ground almonds, maple syrup, and a pinch of salt. Mix until you achieve a fudgy cookie dough texture.

  • Step 2

    Roll the dough into balls, making approximately 8 balls. Place them in the freezer for about ten minutes.

  • Step 3

    In a separate bowl, melt the dark chocolate and coconut oil until smooth. Add a big handful of cacao nibs to the melted chocolate and mix well.

  • Step 4

    Dip the chilled cookie dough balls into the crunchy chocolate mixture, ensuring they are fully coated. Top each ball with an extra sprinkle of cacao nibs.

  • Step 5

    Place the coated balls back in the freezer until the chocolate sets.

  • Step 6

    Once set, store the chocolate-coated cookie dough balls in the fridge.
