ingredients
- 2 tablespoons miso
- 1 tablespoon sake
- 2 teaspoons sugar
- 1 teaspoon soy sauce
- 2 tablespoons water
- 16 ounces (1 block) firm tofu, pressed
- 1 tablespoon plus 1 teaspoon oil
- 1 teaspoon ginger, thinly sliced
- 2 cups napa cabbage, chopped
- 5 ounces mushrooms, sliced
Method
Step 1
Mix together miso, sake, sugar, soy sauce, and water in a small bowl and set aside.
Step 2
Cut tofu into triangles and pat dry with a towel. Heat 1 tbsp oil in a deep pan or wok over medium heat and cook tofu until browned on both sides, about 3-5 minutes each side. Transfer tofu to a plate.
Step 3
Add remaining 1 tsp oil to the wok and heat over medium. Add ginger and cook 30-60 seconds until fragrant.
Step 4
Add napa cabbage and cook until tender, about 3 minutes.
Step 5
Add mushrooms and cook until they soften, about 2 minutes.
Step 6
Reduce heat to medium low. Add tofu and pour the sauce over. Simmer for 3 minutes, stirring frequently and spooning the sauce over the tofu.
Step 7
Serve immediately or cover and let the tofu soak in the sauce until ready to serve.
