For the Oat Base

  • 1 cup rolled oats
  • 3 medjool dates, pitted
  • 2 tablespoons non-dairy milk

For the Date Caramel

  • 7 medjool dates, pitted
  • 1/4 cup peanut butter
  • Pinch of fine sea salt
  • 3 tablespoons non-dairy milk

  • 1/3 cup roasted peanuts
  • 50 grams dark chocolate

To make the oat base:

Method

  • Step 1

    Line an 8×6-inch pan with parchment paper.

  • Step 2

    In a pan over medium-low heat, toast the oats until golden and fragrant, about 5 minutes, stirring frequently to prevent burning. Let cool for at least 5 minutes.

  • Step 3

    In a food processor, blend the cooled oats until they form a rough flour.

  • Step 4

    Add medjool dates and pulse to combine.

  • Step 5

    Pour in non-dairy milk and pulse until the mixture clumps together.

  • Step 6

    Press the oat mixture firmly into the lined pan using a cup or spatula.

To make the date caramel:

  • Step 1

    In the food processor, combine dates, peanut butter, and salt, blending until smooth.

  • Step 2

    If needed, scrape down the sides and add non-dairy milk, one tablespoon at a time, until the mixture reaches a smooth caramel consistency.

  • Step 3

    Evenly spread the date caramel over the oat base.

  • Step 4

    Press roasted peanuts into the caramel layer.

To make the chocolate topping and finish the bars:

  • Step 1

    In a microwave-safe bowl, melt dark chocolate in 30-second intervals, stirring in between until smooth.

  • Step 2

    Pour the melted chocolate over the peanuts, spreading it evenly.

  • Step 3

    Place the pan in the freezer for at least 1 hour to firm up.

  • Step 4

    Once set, cut into bars and store in freezer-safe containers or bags.
