Vegan Meatball And Vermicelli Burger

INGREDIENTS
200g seitan, minced
2 medjool dates
Handful of cilantro
1 can black beans, washed and rinsed
Black pepper and salt, to taste
1 tsp curry powder
1 tsp curcuma
1 Tbsp mustard
1 red onion, finely chopped
2 cloves garlic, crushed
Handful mushrooms, chopped
Handful celery, finely chopped
Olive oil
DIRECTIONS
In a saute pan, fry the onion with the garlic, celery and mushrooms in a little olive oil.
In a blender, mix the rest of the ingredients. Add to a bowl and season with pepper and salt. If necessary, add a little ground oats (a few Tbsp) just enough to make the mixture easy to roll into balls. Bake in a little olive oil.
To assemble burgers, place on bread bun and add vermicelli rice noodles, tomatoes, lettuce, cooked asparagus and homemade tomato ketchup. You can also serve the balls with veggies and vermicelli without the buns!
