For the Steak Tacos

ingredients

  • 1 sirloin steak
  • Olive oil
  • 1 teaspoon chili flakes
  • Salt
  • 8 tortilla wraps, or soft tacos
  • 1 tomato, chopped
  • 1 small head lettuce, chopped
  • 1 cup sour cream

For the Mango Salsa

ingredients

  • 1 mango, chopped
  • 1 red onion, diced
  • 1/2 red bell pepper, diced
  • 1 red chilli pepper, chopped
  • 1 bunch coriander, chopped
  • 1/2 lime, juiced

For the Tortilla Chips

ingredients

  • 4 tortilla wraps, cut into triangles
  • 1 tablespoon olive oil
  • 1 teaspoon chilli flakes
  • 1 teaspoon salt
  • 1 teaspoon freshly cracked black pepper

Method

  • Step 1

    To make the steak tacos: marinate steak with a drizzle of olive oil, chili flakes, and salt.

  • Step 2

    To make the mango salsa: mix all ingredients in a bowl. Set aside.

  • Step 3

    Preheat oven to 360ºF.

  • Step 4

    Drizzle the cut tortillas in olive oil, salt and pepper flakes. Mix to coat the tortillas. Lay on a baking tray in a single layer and cook for 5 minutes, flip, and continue cooking until browned and crisp. Set aside to cool.

  • Step 5

    Heat a frying pan over a high flame. Once hot, add the steak and cook for 3 minutes. Flip and cook for 3 more minutes. Turn to cook the fat edge until crispy. Continue cooking until reaches desired doneness. Set aside to rest for 10 minutes. Slice thinly.

  • Step 6

    Add your flour tortillas to a dry griddle pan to warm and char slightly. Assemble tacos with steak and mango salsa. Serve chips on the side.
