  • 2 tablespoon vegetable oil
  • 1 yellow onion, chopped
  • 1 red bell pepper, seeded and chopped
  • 1 pound ground turkey
  • 1 tablespoon taco seasoning
  • 3 cups chicken stock
  • 1/2 cup Red Gold Petite Diced Tomatoes
  • 1/2 cup Tomato Love Medium Green Chiles
  • 1 (12 ounce) box pasta
  • 1 can corn, drained
  • 1 can black beans, rinsed and drained
  • Kosher salt and freshly ground black pepper, to taste
  • 1/2 cup shredded Mexican cheese

Method

  • Step 1

    Heat oil in large skillet over medium heat and add onion and red bell pepper. Increase heat to high and add ground turkey. Cook until browned, about 8 minutes. Stir in taco seasoning and chicken stock.

  • Step 2

    Stir in Red Gold Petite Diced Tomatoes, Tomato Love Medium Green Chiles, pasta, corn, and black beans. Bring to a boil.

  • Step 3

    Reduce heat to simmer and cook for about 15 minutes. Uncover and stir every 2-3 minutes until thickened. Season with salt and pepper to taste.

  • Step 4

    Remove from heat and serve with shredded Mexican cheese.
