ingredients
- 2 cups basil, packed
- 1/3 cup pumpkin seeds, toasted
- 1/3 cup nutritional yeast
- 3 garlic cloves
- 2 tablespoons lemon juice
- 2 tablespoons olive oil, extra virgin
- 2 tablespoons water, more to taste
- salt and pepper to taste
Method
Step 1
In a food processor, blend the pumpkin seeds first. Followed by the basil, nutritional yeast, garlic and lemon juice. Scrape down the sides occasionally.
Step 2
Drizzle in the oil and water while the food processor is blending until you get your desired consistency. Season with salt and pepper to taste.
Step 3
Use straightaway with pasta of choice, as a savoury spread on toast or as a marinade for vegetables OR store in a glass jar topped with a little bit of olive oil (prevents browning) in the fridge.
