ingredients

  • 1/3 cup Annie's Organic Goddess Dressing
  • 1 pound short shaped pasta
  • 2 carrots, peeled and diced small
  • 5 ounces spinach
  • 1/2 yellow onion, diced
  • 4 cloves garlic, finely chopped
  • 2 tablespoons olive oil
  • 1/4 teaspoon Himalayan salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons chopped rosemary
  • 2 tablespoons capers
  • 2 tablespoons nutritional yeast

Method

  • Step 1

    Bring a large pot of heavily salted water to a boil. Cook pasta according to package instructions or until al dente, about 8-10 minutes. Drain, return to pot and set aside.

  • Step 2

    While the pasta is cooking,, heat 1 tablespoon of olive oil over medium heat in a nonstick pan. Add the diced onions, carrots, garlic, rosemary, salt, pepper and saute until tender. Once the carrots have softened, add the spinach and saute for an additional 2 minutes or until fully wilted.

  • Step 3

    Add all the sauteed vegetables to the pot of pasta and stir to combine. Add ¼ cup of the green goddess dressing and nutritional yeast. Mix well and top with capers. Can be served hot or cold.
