Chickpea Pasta with Creamy Beet Cashew Sauce

Yield: Serves or Makes 2 - 3
Add ingredients directly to your favorite online grocery cart (where available).
- 1 (15 ounce) can or jar beets, drained
- 1/3 cup raw cashews
- 2 tablespoons nutritional yeast
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1 box (8 ounces) chickpea pasta, cooked according to package directions
Combine beets, cashews, nutritional yeast, lemon juice and salt in a high-speed blender. Blend until thick and creamy. Add a tablespoon of water if needed, to thin out the mixture.
Pour sauce over cooked pasta. Toss to coat.
