Buy ingredients
Add ingredients directly to your favorite online grocery cart (where available).


  • 1 (15 ounce) can or jar beets, drained
  • 1/3 cup raw cashews
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1 box (8 ounces) chickpea pasta, cooked according to package directions


  • Step 1

    Combine beets, cashews, nutritional yeast, lemon juice and salt in a high-speed blender. Blend until thick and creamy. Add a tablespoon of water if needed, to thin out the mixture.

  • Step 2

    Pour sauce over cooked pasta. Toss to coat.
