ingredients
- 2 cup khoya crumbles
- 1 cup ricotta
- 3/4 cup condensed milk
- 1 teapsoons rose water
- 2-3 tabelspoons rose petal jam (gulkand)
- 1 cup chopped dark chocolate
- 1 tabelspoons almond slivers
- 1 dried rose petals
- 1 tabelspoons ghee
Method
Step 1
In a non-stick pan, mix together the khoya, ricotta and condensed milk on low heat until they all come together and start to hold it's shape without sticking to your finger. Constantly stir these ingredients together to avoid sticking to the pan and burning. (This step takes about 20-25 mins).
Step 2
Next take the pan off the heat and add rose water, rose petal jam and mix one final time to incorporate everything together.
Step 3
Brush a 12x6 inch pan with ghee and lay parchment at the bottom. Brush a little bit of ghee over the parchment as well.
Step 4
Spread the hot khoya mixture evenly in this greased pan and refrigerate for 2 hrs to let it set.
Step 5
After 2 hrs, melt the chocolate and spread over the set khoya barfi. Gently tap the tray on your kitchen counter to let out any air bubbles. Sprinkle almond slivers and dried rose petals and refrigerate for another 2 hrs to set.
Step 6
Cut into 2 inch squares and serve chilled!
