"Oftentimes simple food is the best food! I make bowls like this all the time (but definitely not arranged with as much precision unless I’m taking pics for the gram lol). This one features Basmati rice, air fryer tofu, avocado, asparagus and tomatoes, all topped with sesame seeds. As a sauce, I like to have something straightforward like hummus, tahini or just a drizzle of Tamari."

ingredients

  • 1 (14 ounce) block cubed extra firm tofu
  • 2 teaspoons turmeric
  • 2 teaspoons tamari
  • 1 cup basmati rice, cooked according to package directions
  • 2 bunches asparagus
  • 1 large avocado
  • 2 cups cherry tomatoes, chopped

Method

  • Step 1

    Add the tofu to a bowl with the turmeric and tamari, stirring them together until the tofu is coated. Cook the tofu in an air fryer for 10 minutes at 390ºF.

  • Step 2

    Meanwhile, boil the asparagus for 2-3 minutes, until bright green.

  • Step 3

    Serve the tofu with the rice, asparagus, avocado, cherry tomatoes and any dressing of your choice.
