For the Biscuits

ingredients

  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons sugar
  • 1 stick unsalted butter, chilled and diced
  • 3/4 cup buttermilk
  • 1 cup blueberries
  • 1/2 stick unsalted butter, melted

To Make the Biscuits

Method

  • Step 1

    Preheat oven to 500ºF. Combine all dry ingredients in the bowl of a food processor. Add diced butter and pulse until it is pea-sized. Add buttermilk and pulse until dough separates from sides of the bowl.

  • Step 2

    Spill dough onto well-floured surface and add the blueberries. Knead gently to incorporate into the dough, folding the dough over itself a couple of times. Use your hands to press the dough until it is about 1/2-inch thick. Cut out biscuits with a biscuit cutter. Place in a cast iron skillet, making sure the biscuits are touching. Brush with half the melted butter.

  • Step 3

    Bake for 8-10 minutes. After about 6 minutes, remove skillet from the oven and brush the biscuits with the remaining butter. Put back in the oven for the remaining time. Remove and let sit for about 10 minutes to cool before glazing.

For the Glaze

ingredients

  • 1 cup powdered sugar
  • 3 tablespoons milk
  • 1/2 teaspoon vanilla extract

To Make the Glaze

  • Step 1

    Combine all ingredients well in a small bowl.
