Matcha Chia Seed Parfait

Ingredients:
1 tbsp chia seeds
1/2 cup milk (dairy or non-dairy)
1 tsp matcha powder
1-2 tsp honey or maple syrup
fresh fruit (strawberries, peaches, etc)
coconut milk or greek yogurt (plain or vanilla)
home made or store bought granola*

Directions:
In a small sauce pan, heat the milk and honey/maple syrup together over low heat until it just starts to steam, remove from heat and stir in chia seeds. Pour mixture into a container and let cool completely; it will thicken as it cools.

Prepare the parfait by alternating layers of matcha chia seed pudding, yogurt, fruit, and granola. *To make easy homemade granola, preheat oven to 300F, combine 1 tbsp honey with 1 tbsp coconut oil (or other neutral oil) and 1 tsp of vanilla. Stir in 3/4 cup museli, 2 tsp cocoa powder and a pinch of salt. Lay on a silicone lined baking sheet and bake at 300F for 15-20 minutes, stirring once. Cool completely and store in an airtight container until ready to consume.
