Cod Ceviche With Coconut Milk

Ingredients:
4 limes
2 cod loins
1/4 red onion
4 tsp sweet corn
1 cup coconut milk
1/2 avocado
5-6 cherry tomatoes
1/2 red pepper or chili
fresh chive
fresh coriander
extra virgin olive oil
Directions:
First wash and dry the limes. Cut the limes in half and squeeze them. Put the juice in a large bowl, add the coconut milk.
Cut the onion into slim slices and mix together. Do the same with the cherry tomatoes, cut them into a little slices and mix.
For the cod, remove the skin from the two loins with a sharp knife. Cut them into a strips, and then into cubes of 1,5 cm. Combine with the other ingredients, to macerate and cook the fish with the citric juice.
In the same bowl, add the sweet corn, the avocado, cut into cubes, the red pepper, previously sliced and combine all the ingredients with a spoon.
Finely chop chive and coriander and add to bowl.
Finally, cover with plastic wrap and let it stand for 20 minutes.
To serve, spread in bowls or soup plates with whole wheat bread.
