I absolutely love this soup, I used to turn this into puree when I was weaning Lillbro. It's so smooth and creamy, leaving a velvety texture in your mouth, simply wonderful! ???
It goes really well with cous cous or quinoa in #puree.

-TIP: Wear rubber gloves when preparing beetroot to prevent the juice staining your hands.

Ingredients:

? 1 large beetroot .
? 2 large parsnip .
? 100ml liquid (plain boiled water / vegetable broth)
? sprinkles of nutmeg powder
? salt to taste -
Method.
1. Steam beetroot and parsnip together until soft.
2. Add liquid and a sprinkles of nugmeg powder, salt and blend until you've reached your desired consistency.
3. Suitable for freezing .
