ingredients

  • 1 peach, sliced
  • 1/3 bag spinach
  • 1/2 Romane lettuce, roughly chopped
  • Handful of rocket
  • 1/2 pack halved cherry tomatoes
  • Handful of black olives
  • sprig rosemary
  • Crumbled feta
  • Handful of flaked almonds
  • Olive oil
  • Balsamic vinegar
  • Salt & pepper

Method

  • Step 1

    Heat a pan without oil. Add peach slices flesh side down. Cook for 3 minutes or until black griddle marks appear. Flip over and do the other side.

  • Step 2

    Add the almonds and rosemary to the pan around the peach slices to toast.

  • Step 3

    Assemble all the salad ingredients on two plates.

  • Step 4

    Top with the peaches, toasted almonds & rosemary.

  • Step 5

    Serve with a grind of black pepper & sea salt, and a drizzle of olive oil & balsamic.
