ingredients
- 2 carrots, sliced into 1/2 inch thick pieces
- 5 small red potatoes, cut and quartered
- 1 medium zucchini, sliced into 1/2 inch thick pieces
- 2 cups red or green peppers, sliced
- 1 cup broccoli
- 1 package Crave House Plant-Based Italian-Style Sausages, sliced into 1/2 inch thick pieces
- 2 tablespoons Italian seasoning, more to taste
- olive oil, for drizzling
Method
Step 1
Preheat oven to 400° F.
Step 2
Line a large sheet pan with parchment paper and set aside.
Step 3
Peel and thickly cut carrots and set aside. Wash and chop red potatoes into quarters, leave skin on. Wash and cut zucchini, cut into half inch pieces. Wash and cut peppers into strips. Wash and cut broccoli into florets.
Step 4
Slice sausages into thick medallions about 1/2 inch.
Step 5
Place all the veggies and sausage on prepared sheet pan.
Step 6
Season with Italian seasoning.
Step 7
Drizzle with olive oil and then mix everything in the pan together making sure everything is coated with a layer of olive oil (make sure ingredients are separated and not overlapping each other).
Step 8
Bake for 10 minutes and then flip veggies and sausage over and bake for an additional 15 minutes. Serve over your favorite carb and enjoy!
