Here we are again with another weekly meal plan! Let’s take it easy and focus on easy-to-make meals packed with big flavor. I hope these recipes help to simplify the week ahead.

The theme of the week (any honestly the rest of August!) is: simple dinners. With lemongrass chicken, fried rice, summery zucchini fritters, a mozzarella and tomato saladBillie Eilish's favorite salad, and a light salmon soba miso soup, you’re sure to hit every flavor note and craving that might come up!

Pull out all the stops for the weekend and indulge this Salty Honey Peanut Butter Skillet Cookie. It's filled with honey cream cheese and topped with vanilla ice cream. A honey peanut butter sauce that hardens as soon as it hits the cold ice cream (hint: the secret is coconut oil!)
