Zucchini, Zatar and Feta Fritters

ingredients
- 3 grated fine zuccchini
- 1/2 grated fine red onion
- 1 teaspoon salt
- 2 teaspoon zatar
- 2 tablepoons baking powder
- 150 grams Greek Feta
- 1/2 teaspoon freshly cracked black pepper
- 3/4 cup all purpose flour
- 3 tablespoon olive oil
Method
Step 1
Grate the zucchini and red onion and place in a medium mixing bowl. Crumble the feta and add the baking powder, sea salt, zatar, black pepper and mix well. Add the flour and stir until evenly combined.
Step 2
Preheat the oven to 180℃. Heat the oil in a none stick pan on high heat. Using an ice cream scooper, dollop into the hot oil and cook until golden brown, roughly 3-4 minutes. Flip and press down a little too flatten. Cook to brown the other side and then place onto an oven safe dish. Repeat with remaining batter and then cook the fritters in the oven for 15-20 minutes or until slightly risen and cooked through.
Step 3
Enjoy hot with whipped cream cheese or salted yogurt and fresh mint.
