What better way to enjoy the best of summer produce than with a slice of crusty bread carrying sweet white peaches, salty prosciutto and herbaceous ribbons of basil. Serve at breakfast, you next brunch at home or just enjoy with a glass of wine.

ingredients

  • 1 slice of gluten free bread of choice
  • 2 1/2 tablespoons mascarpone cheese
  • 2 slices thinly sliced prosciutto
  • 3 basil leaves, chiffonade
  • honey, for drizzling to taste

Method

  • Step 1

    Toast your bread of choice.

  • Step 2

    Smear on the mascarpone cheese and drizzle with honey. Layer with basil, sliced prosciutto and sliced white peaches.

  • Step 3

    Drizzle with extra honey if desired and serve.
