ingredients

  • 85 grams coconut oil
  • 175 grams vegan semi-sweet chocolate, chopped
  • 135 grams powdered sugar
  • 113 grams aquafaba
  • 1 teaspoon vanilla extract
  • 135 grams all-purpose flour
  • 30 grams Dutch-processed cocoa powder, sifted
  • 1 teaspoon instant espresso powder
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 50 grams vegan chocolate chunks
  • 50 grams Oreos, chopped + divided

Method

  • Step 1

    Preheat the oven to 350 F (180 C).

  • Step 2

    In a large mixing bowl, combine the coconut oil and chopped vegan chocolate. Heat in the microwave in 30-second increments, stirring in between until the chocolate is completely melted.

  • Step 3

    Add the powdered sugar, aquafaba, and granulated sugar to the melted chocolate and whisk until shiny and homogenous.

  • Step 4

    In a separate bowl, whisk together the flour, sifted cocoa powder, espresso powder, baking powder, baking soda, and salt. Transfer the dry ingredients to the wet and whisk until smooth.

  • Step 5

    Toss in the vegan chocolate chunks and chopped Oreos (I like to save some to go on top of the batter before baking as well).

  • Step 6

    Transfer the batter to 4 or 5 mini cast iron skillets (5-inch diameter, 1-inch deep), place them on a sheet pan, bake for 14 minutes.

  • Step 7

    Pull the brownies out of the oven and let them cool for 5-10 minutes. Serve warm!
